Portobello Pizza

Ingredients

Makes 4 servings.

  • 4 large portobello mushroom, stems removed (gills removed – optional)
  • 8 tbs tomato sauce
  • 2 cups shredded mozzarella cheese
  • 16 slices pepperoni, chopped
  • 12 fresh basil leaves, chopped
  • 2-3 cloves garlic, minced
  • Salt & pepper, to taste

Tomato Sauce

  • San Marzano tomato sauce when possible
  • And a pinch kosher salt

Optional Toppings

  • Sliced olives
  • Fresh or seared onions
  • Sliced tomatoes
  • Freshly grated parmesan
  • Fresh oregano
  • Italian seasoning
  • Parsley
  • Crispy bacon
  • Cooked, diced chicken

Preparation

Step 1  Preheat oven to 400°F, and lightly grease a baking sheet. 

Step 2  Remove the stems and as an option you can remove the gills to make extra room for more toppings. Use a teaspoon to gently scrape the gills from inside the mushroom.

Step 3  Spread the tomato sauce inside the mushroom cap, add shredded mozzarella and then the pepperoni, garlic, and basil. Finally add salt and pepper, to taste.

Step 4  Place on the middle rack of a preheated oven for 15 minutes or until the cheese turns a golden brown, then serve.
