Ingredients
Makes 4Â servings.
- 4 large portobello mushroom, stems removed (gills removed – optional)
- 8 tbs tomato sauce
- 2 cups shredded mozzarella cheese
- 16 slices pepperoni, chopped
- 12 fresh basil leaves, chopped
- 2-3 cloves garlic, minced
- Salt & pepper, to taste
Tomato Sauce
- San Marzano tomato sauce when possible
- And a pinch kosher salt
Optional Toppings
- Sliced olives
- Fresh or seared onions
- Sliced tomatoes
- Freshly grated parmesan
- Fresh oregano
- Italian seasoning
- Parsley
- Crispy bacon
- Cooked, diced chicken

Preparation
Step 1 Preheat oven to 400°F, and lightly grease a baking sheet.Â
Step 2Â Remove the stems and as an option you can remove the gills to make extra room for more toppings. Use a teaspoon to gently scrape the gills from inside the mushroom.
Step 3Â Spread the tomato sauce inside the mushroom cap, add shredded mozzarella and then the pepperoni, garlic, and basil. Finally add salt and pepper, to taste.
Step 4 Â Place on the middle rack of a preheated oven for 15 minutes or until the cheese turns a golden brown, then serve.
