Pink oysters retain most of the nutrients until the cell walls are broken down with heat. Most cell walls of mushrooms cannot broken down within our digestive system and heating or cooking the mushrooms breaks down the cell wall before ingestion. You will want to cook these mushrooms not only for the nutritional benefits but for the flavor enhancement. When pan fried on its own, pink oyster mushroom have a taste and texture slightly similar to lobster or crab. When added to a recipe, pink oysters will take on the flavors of the accompanying ingredients and dishes while adding a slight umami complexity.
